Raisin Pancake Squares

Cooking Spray
1 egg
2 cups pancake mix
1 1/2 cups milk
2 tablespoons cooking oil
1 teaspoon ground cinnamon
1/2 cup raisins or any mixed dried fruit bits
Margarine or butter, if you like
Maple syrup

Pre-heat oven to 425 degrees
Spray bottom of a 15X10X1 inch baking pan and set aside.

In a mixing bowl add egg, pancake mix, milk, cooking oil and cinnamon.  Stir with a wooden spoon until dry ingredients are moist. ( Batter should be lumpy, so don't stir too much)  Stir in raisins or other dried fruit bits.

Pour batter into the greased baking pan. Spread batter evenly in the pan.

Put the pan in the oven and bake about 10 minutes or until the edges are light brown and the top springs back when touched with finger tip.  Use potholder to remove pan from oven. Cut into 6 inch squares or smaller, if you like. Using a pancake turner remove from pan and place onto the plate. Spread margarine or butter then pour syrup on top.   (Serves 6)

TIPS for KIDS

Cooking is fun.

Find a recipe and carefully read it. Assemble the ingredients and equipment that will be needed. Be sure you have an ADULT present to help you at all times.

SAFETY TIPS:

Always use hot pads or potholders when cooking or baking and make sure an ADULT is there to help you.

Always wash your hands before you start to cook! Use soap and water, clean all parts of your hands really good.

Don't forget: Help clean up after you have finished baking or cooking. Mom & Dad will like that and so will your grandparents.
