Strawberry Preserves
(Granny Farren Grover's Recipe)
3 cups fresh strawberries, cleaned &
stems removed
2 1/2 cups sugar
Put strawberries and sugar in a sauce pan. Cook at the lowest possible heat until a slow boil is seen.
NOTE: Cooking too high will burn the strawberries.
Continue to cook over low heat for 45 minutes to an hour. Once the strawberries are cooked, mash well with a potato masher.
Allow the strawberries to cool, then spoon into prepared jars of your choice (I use pint jars). Refrigerate at all times and they should keep up to
3 months.
***Over water bath canning method maybe used. Follow the manufactures instructions for the jars.
