Eggs in a Basket


Texas Toast (1 slice per each serving)  
(Use a biscuit cutter to cut out the center of the bread)
Melt Butter to coat bread on both sides
1 egg per slice of bread                                             

In a large skillet over medium heat, place one or two slices of Texas Toast that has been butter on both sides into the pan. Put a small slice of butter in center of cut out hole and add one egg to center; salt & pepper to desired taste.      

After egg and toast have browned on one side, turn bread over to brown the egg and bread on the other side. Make sure the white of the egg is cooked well and not runny.  Butter each leftover center and cook until brown on both sides.   
 
Serve plain or try maple syrup or honey drizzled over top.

TIP:

How to make buttermilk when you don't have any or don't use buttermilk daily.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup (let stand for 5 minutes before using)

NOTE:
The pre-packaged cornbread mixes are very good and they are quick & easy to fix in a pinch. Just try different brands until you find one you like. Of course, nothing is as good as homemade cornbread.
