Yeast Rolls


Mix well and put aside:
1/4 cup shortening                                                                              1/4 cup sugar                                                                                          1 egg                                                                                                       1 cup warm water                                                                                   1 package active dry**yeast or yeast cake                                                    (**Dissolve yeast in 2 tablespoons warm water)

In a large bowl mix 3 cups of flour and a 1/4 teaspoon salt.       ADD the moist ingredients and mix well with a mixer or hand stir. Set in a warm place to rise.

When dough has doubled in size then work the dough down and place on a floured board. Knead dough for 30 seconds and roll or pat dough out with hand about 1/2" thick and cut with biscuit cutter.
Place cut  biscuits on a greased baking sheet or put each one in a greased cup cake pan and let dough rise again.

Bake 350F degrees until light brown.

TIP:

How to make buttermilk when you don't have any or don't use buttermilk daily.

USE 1 Tablespoon of lemon juice or vinegar plus sweet milk to make 1 cup (let stand for 5 minutes before using)

NOTE:
The pre-packaged cornbread mixes are very good and they are quick & easy to fix in a pinch. Just try different brands until you find one you like. Of course, nothing is as good as homemade cornbread.
