Chicken & Rice Casserole
1 can evaporated milk (12 oz size)
1 pkg (3 oz) cream cheese, softened
1 can cream of chicken soup
1/2 cup water
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1 bag (16 oz size) frozen broccoli, cauliflower & carrot mix, thawed
2 cups chicken, precooked & cubed (or can chicken)
1 1/2 cups white rice, instant uncooked
1/2 cup cheddar cheese, shredded
Whisk can milk & cream cheese in a baking dish until smooth. Add can soup, water, garlic powder & pepper; mix well. Add mixed vegetables, chicken & rice. Cover lightly with foil.
Bake 35 minutes at 350F degrees. Remove cover and top with cheese. Continue baking uncovered 10-15 minutes or until cheese has melted and mixture is bubbly. Let stand 5 minutes before serving.
