Sweet & Sour Coleslaw
1 yellow, orange or red bell pepper
1/2 small red onion
1 bag (16 oz.) coleslaw
2 cups shredded carrots
DRESSING:
1/3 cup apple cider vinegar
3 Tablespoons honey
2 Tablespoons vegetable oil (EVOO)
2 teaspoons lemon juice
1/2 teaspoon each salt & pepper
Whisk dressing ingredients together in a medium bowl. Cut bell pepper and onion into bite-size 1/4 inch thick strips. Toss coleslaw, carrots, bell pepper, onion and raisins in dressing.
Cover and chill 30 minutes before serving.
