                     Broccoli &
Rice Casserole

2 10oz. pkgs broccoli, thawed 
1 can cream of chicken soup
1 can evaporated milk
1/2 cup celery, chopped
1/2 cup onion, chopped 
1 cup rice, uncooked 
1 cup Cheddar Cheese, grated

Cook rice according to package instructions. Saute onions and celery in 1 tablespoon butter. 

After rice is cooked and drained, mix all ingredients together. Pour into a large casserole dish.

Bake at 325 degrees for 35 minutes. 

Spread cheese on top during last 5 minutes of cooking or until melted. 

NOTE: A 12 oz can of chicken may be
substituted.  Drain juice, stir in before baking.
