Coconut Chess Pie
2 eggs, beaten
1 1/2 cups sugar
1 stick margarine, melted
1 1/2 Tablespoons flour
2/3 cup milk
1 teaspoon vanilla
1 can coconut (reserve 1/2 for topping)
1 pie crust, unbaked
Mix all ingredients together, pour into pie crust and sprinkle other 1/2 coconut on top.
Bake 425 degrees for 10 minutes then reduce heat to 325 degrees, bake until set. (Pie will not shake in middle) It should be a golden brown.

Five Minute Coconut Pie
1 3oz. cream cheese, softened
1/2 cup milk
1 Tablespoon sugar
1 can coconut
1 8oz. frozen whipped topping, thawed
1/2 teaspoon vanilla
1 pie crust, baked according to directions
Combine cream cheese, sugar, milk and coconut in a blender at low speed for 30 seconds. Fold in whipped topping and pour into baked pie crust and freeze 4 hours.
