Coconut Pecan Pie
3 Eggs
3/4 cup sugar
3/4 cup dark corn syrup
1 teaspoon vanilla
1/8 teaspoon salt
1/4 cup butter or margarine, melted
1 Tablespoon cocoa
2 cups pecan halves
1/2 cup coconut
1 pie crust, unbaked 9-inch
Combine eggs, sugar, syrup, vanilla, and salt in a large mixing bowl; mix well. Combine butter and cocoa; add & stir into egg mixture. ADD pecans and coconut, mixing well.
Pour mixture into pie shell.
Bake at 350 about 50 minutes or until set. (Knife comes out clean in middle).
NOTE: This is a favorite next to the chocolate pecan pie. I know you will enjoy this heavenly creation.
